Why should you store popcorn kernels in the refrigerator?
The reason popcorn “pops” is because of a small amount of moisture found within a popcorn kernel. Roughly 15% of a kernel is water. DO NOT store your kernels in the refrigerator, as this will also cause the kernels to dry out. So yes, popcorn can go “bad” if not stored properly.
Does popcorn pop better if kept in the freezer?
Freezing unpopped kernels will not make them pop better. Sometimes moisture is lost along the way and this is an important factor in making the kernels expand and pop. It is still best to keep them sealed tightly at room temperature for optimum popping.

Shelf life On average, our kettle corn stays fresh for 10 days to 2 weeks in our sealed bags. Shorter shelf life in the summer; longer shelf life in the winter. Put kettle corn in the freezer and it will stay fresh longer. It has a low moisture content, so it will not freeze.
Does humidity affect popcorn?
To properly pop, kernels must have a moisture content of 13.5 to 14 percent. If raw popcorn is left exposed for one day in warm temperatures, it can lose one percent of moisture; this will result in more half-popped or unpopped kernels. Popcorn that has lost three percent or more of its dampness will normally not pop.
