Does milk contain nitrates?
Normal, fresh cow’s milk contains less than 1 ppm nitrate (and nitrite) content (4, 10). However, most foods and water supplies con- tain levels higher than this (2, 4, 12). Serious and occasionally fatal cases of infantile nitrate poisoning have occurred following ingestion of well water containing excessive nitrate.

Some labs, though, report the amount of nitrogen that is in the nitrate ion and call it nitrate nitrogen and report it chemically as NO3-N. Nitrate is one part nitrogen plus three parts oxygen so nitrogen only makes up about 22.6 percent on the nitrate ion.

It depends on the food. Organic foods like vegetables and fruit typically have fewer nitrates compared to conventional foods. However, processed organic meats do not have nitrates. In Canada, adding nitrates to processed organic meats is not allowed.
What are nitrates and why are they added to meat?
Nitrates are also added to processed meats as a preservative. There is strong research that shows a diet high in processed meats increases the risk of colon cancer. However, it is not yet clear if this is because of the nitrates or other compounds in processed meat.
